Yummy Fast Breakfast Muffins for Mamas

I just had to get on and share these delicious and easy to prep egg muffins for the mamas out there, like me that are making breakfasts for a bunch a kids but struggle to eat themselves! I don’t have much to say except make these, store them in a glass container and you’ve got a week’s worth of mama breakfasts you can feel good about eating. I reheat mine and top with avocado for some healthy fats. They have all the things you need for hormone balance and a good start to your day. Fat, Fiber, Veggies and Protein! Enjoy


  • 7 eggs

  • 1/4 cup almond milk 

  •  salt to taste

  • pepper to taste

  • 1 tsp mustard powder

  • pinch of cayenne 

  • 1 bag of cauliflower rice (Whole Foods or Trader Joes)

  • 1 1/4 cups diced ham (optional)

  • 2 cups spinach roughly chopped

  • 1 chopped red pepper


  1. Preheat the oven to 350 degrees

  2. Spray a muffin tray with coconut cooking spray

  3. In a bowl whisk the eggs, almond milk, salt, pepper and mustard powder. Add in the cauliflower rice.

  4. Place a spoonful of the ham and spinach into the bottom of muffin cups. Pour the egg and cauliflower mixture over top of each and then top each muffin with the remaining ham and spinach.

  5. Bake in the oven for 25 minutes until the edges are lightly browned

  6. Run a spatula around each muffin to loosen and then place on a wire rack to cool.

  7. Store in a glass container, reheat and enjoy!
